I'll be honest, when my friends the Millers said they (and by "they", I mean Nadine... not both of them) were making Gnocchi for a play date dinner, I didn't know what they were talking about, and I had to Google it... privately, of course... didn't want to seem like an ignorant food idiot.
So you don't sound like an idiot either, it's pronounced "No-Key". Where can you find the main ingredient? It took me a while to figure this one out, but it was in the dry pasta section (not the refrigerated pasta section) of the grocery store. I actually found the best selection to be at Super Target, but Cub did have some too... way up on the very top shelf.
I'm pretty sure that anything with pasta and cheese will be a hit with most families, but it was with mine for sure.... or maybe it was just that Leighton was so starving by 4:20 that by the time 5:00 came around, he would have eaten his own arm.
This was my second time making this dish, and as is usually the case, some tweaking was done on my part before I got it to where I was satisfied (and there will be one more tweak for next time).
Give it a try, you will love it... and it's easy!
Gnocchi Mac and Cheese
NOTE: If I wasn't sick right now, this dish would pretty much have fed all three of us (2 adults and one hungry little toddler boy) with no leftovers. If there are more of you in your family, you will want to make a double batch. Beware, however, gnocchi (especially when filled with potato) is deceivingly filling for something so small!!!
