First of all, let me explain the photos... no, the one of the plate isn't pretty or well plated, but I forgot to take the picture until it was time for a second helping... it's my husband's already messy plate, but that's just a testament to how good it was (forgot the pic until mid-way through the meal). Even my little three-year-old was loving it, as you can clearly see from the smile on his face.
I can't remember where I got this recipe from originally, but it's a good one. Keep in mind, however, that carbonaras have raw-ish eggs so no eating this when you are pregnant (I know, one more annoying sacrifice to have to make in the name of motherhood)! It's an amazing dish that's relatively simple to make so give it a shot!
This amount serves about 3 hungry adults. I made a double batch when there were three adults and one toddler, and there was quite a bit left over... but leftovers aren't too bad either. Enjoy!
