Okay, so this recipe is one of my staples especially for having guests over for dinner because I can make it ahead of time, put it in the fridge, and pop it in the oven when it's time. Recently, a good friend requested the recipe, and I thought to myself, "Self, we should make this again and put it on the blog for all to enjoy." No, I don't really talk to myself, much. As for that yummy looking side of potatoes, I whipped that up with no recipe. I watch a LOT of Chopped on the Food Network, and that has inspired me to be a little more adventurous with my cooking.
The plan was to make rice (in my rice maker - highly recommend), but I ran out of time to make it because I was feeding a baby. I like potatoes in the oven, but I was using the oven for the chicken so I decided to wing it. I used my mandolin to thinly slice 3 yellow/golden potatoes (skins on), boil them for a few minutes in hot water, and fry them in a pan with olive oil, dried parsley, sea salt, minced garlic, and pepper. Did they taste great? Yes they did; and my husband even commented how much he liked them. (seasonings people, make the dish!)
As for the chicken, I got the recipe from a Hellmann's ad. You know, sometimes the recipes that you find in advertisements are the best (see my cookie recipe). Try this one - you will NOT regret it!
