By now you should have realized that none of my recipes come from a culture-rich past filled with ethnic foods. Nope, this recipe for Korean Pancakes came from a video game that was, in fact, the jump-starter that helped me learn to cook years ago. And who says video games are worthless?
I'm not sure what makes these pancakes Korean, but my little Leighton loves them. Granted, he doesn't quite love the hot sauce that you serve with them, as can be noted by his reaction of crying and trying to pull the tongue out of his mouth. To that I say, "Well, don't ask for hot sauce if you can't handle it!" (I did warn him it was spicy).
Over the years, I have perfected making this yummy dish. I can't even remember how the original recipe went so follow my instructions, and yours will turn out great too!
Korean Potato Pancakes
I like my pancakes swimming in sauce, but Mark likes them with quite a bit less. Make sure to have plenty of milk on hand if you can't handle spice. This recipe makes enough for the three of us (2 adults + 1 toddler) plus one adult-sized leftover serving for lunch the following day.
