Yes, there is bacon in this mac and cheese and bacon on top of this mac and cheese ... but, as my husband says, "Can you ever have too much bacon?" My little boy refuses to eat mac and cheese from the blue box or easy mac so when the recipe had "mac and cheese" in the title, I was hesitant to try it. However, he loved it, my husband loved it, and my au pair loved it. It was a hit.
The problem was, as is unfortunately the case with some recipes found on Pinterest, that the resulting dinner doesn't always turn out to look like the picture or how the recipe said it would. Maybe my problem was that I substituted the heavy cream for half and half because I didn't want to spend the entire evening hiding in the bathroom, and I didn't want to undo all of my post-pregnancy weight loss progress.
Regardless, I had a quick fix to thicken up the soupy mess (a little corn starch mixed with water), and voila! It was creamy and delicious!
Gruyere Bacon Mac and Cheese (I made 1.5 times this recipe for my son, my husband, my au pair, and myself, and there's about 1.25 servings leftover)
Tip: If yours doesn't thicken up and is soupy, just do as I did and mix up a little corn starch and water, and add that in to thicken. (Keep on med-low while adding in corn starch mixture)
