Yes, this is another Pinterest recipe people, not a secret family recipe (I'm not a real Asian, remember?). The title of the recipe says it's "Better-Than-Takeout Chicken Fried Rice", but I don't see why they would include chicken in the description because there is no chicken of any kind. I'm not sure if it is better than take-out because things usually taste better when someone else makes them (ha - maybe I should ask my husband who didn't make it), and I think Chinese restaurants have some secret thing they put into their food (just like McDonalds does) that makes it extra yummy.
Regardless, I thought this recipe was pretty simple and easy to make. I've made fried rice before, but I usually add tofu or pork and then serve it as a main dish because I can't see going to this much effort for a side dish. I also ignored the directions on this recipe to use day-old or leftover rice, and I think I see why they recommend that. I made fresh rice, and it is almost too fluffy compared to the rice that is in actual Chinese takeout fried rice. Will try making the rice a day ahead of time for the next time I try this recipe. I also thought the eggs were a little skimpy for the amount of fried rice so you could increase them from 2 to 3. Enjoy!
