In this household, I'm always looking for recipes that are tasty and healthy. Usually "Alfredo" means heavy and fattening, but this recipe calls for you to make your own Alfredo sauce, and it's a healthier version. Plus, after I purchased 80 pounds of chicken breasts, I needed more recipes with chicken in them!
The only issue I had with this recipe was that it called for pre-cooked chicken, and I don't like to buy pre-cooked chicken so I had to find a recipe to bake my raw chicken first... annoying, but not something I could avoid forever.
How to bake chicken:
Take your boneless, skinless chicken breasts and brush both sides with olive oil. Salt and pepper them, and place them in a foil-lined baking dish. Bake for 10 minutes at 450 degrees. Flip and re-oil. Bake 8-10 minutes or until done. Cover with foil and allow to rest for 5 minutes before slicing.
