Why did I decide to cook a new, moderately complicated recipe on Mother's Day? I don't know. I've been so exhausted all day every day at this point in the pregnancy, which is why I haven't been as active on my blog - so sorry fans! Anyway, I have never made beer cheese soup before today, but it turned out great, and surprisingly, my little boy ate and liked it! I know this picture is boring... sorry. It kind of took a lot of effort not to fall face-first asleep in the hot crock pot.
Anyway, the most annoying part of making this soup was the dicing of all of the vegetables. Had I had a food processor (I see one in my future), it would have been a breeze. The second downside was smelling the cooking of onion all day... but that's a downfall of any crock pot recipe and being home all day to absorb the STANK into your very soul.
I don't know why, but when my mother-in-law makes beer cheese soup, she puts popcorn in it, so I did the same. It's good. You could also serve it with fresh rolls...mmm... bread.
I actually didn't (and wouldn't) change anything from this Pinterest recipe for the next time I make it... Oh, and I figured that if I was going to get my little guy to eat it, I'd better go with the "smooth and creamy" option, so Mark ran out and got me an immersion blender... little guy didn't even know he was eating celery... :)
