Another successful Pinterest find: Baked Egg Boats (click here for link to original recipe). These were fairly easy to make, and they were a hit with both my husband and myself. No review from Mr. Leighton as he is currently on a strict diet of bread and water (no, he's not in prison, he's got the stomach flu).
What would make this recipe easier, less "snooty", and probably less expensive to make is to substitute out the gruyere cheese for a more mainstream cheese, and to substitute out the pancetta (which, by the way, never ask for this a Wal-Mart because they will look at you like you're an alien like they did when I asked for it once, and the two employees I asked in that department said they'd never heard of it) for bacon. I had a hard time finding four demi sourdough baguettes so I ended up with two 12" french bread baguettes, and it turned out just fine.
And as I never trust a Pinterest recipe 100%, I watched the time and my food, and ended up cooking them for five more minutes for a total of 30 minutes. The extra time needed may have been a result of the 12" baguettes I used versus the demi baguettes that the original recipe calls for. Give it a try - for BRINNER (breakfast for dinner)!

The two of us ate 1.5 of these 12" egg boats, but we should have stopped before we started eating the second one... eat slowly, and eat less than you think you actually want because these expand in your stomach!
